Αν έχετε συνδέσει τα pancakes με βούτυρο, ζάχαρη, αυγά και χημικά διογκωτικά, ήρθε η ώρα να αναθεωρήσετε. Η  σημερινή μου πρόταση είναι ένα μεγάλο pancake, εξολοκλήρου φτιαγμένο από αλεύρι βρώμης το οποίο επέλεξα να γαρνίρω με σπιτική μερέντα, φρέσκια μπανάνα και ξηρούς καρπούς. Τέλεια πρόταση όχι μόνο για special πρωινό αλλά και για γλυκό. Γίνεται πάρα πολύ γρήγορα και εύκολα με υλικά που όλοι έχουμε στο σπίτι μας!  Υλικά για 2 pancakes των 26 εκατοστών: - 200 γρ αλεύρι βρώμης (νιφάδες βρώμης αλεσμένες στο μπλέντερ) - μια τσιμπιά  αλάτι (χρησιμοποίησα θαλασσινό) - 2 γρ φυσική βανίλια ή 2-3 βανιλίνες - 100 γρ σιρόπι αγαύης ή μέλι - 70 γρ άοσμο λάδι καρύδας - 250 ml γάλα καρύδας (όχι αυτό το ψυγείου αλλά από τα ράφια)  Επικάλυψη με - μπανάνες - ξηροί καρποί - σπιτική μερέντα ή ταχίνι με κακάο - ότι άλλο θέλετε και σας αρέσει  Εκτέλεση: 1. Τοποθετούμε όλα τα υλικά σε ένα μπολ και ανακατεύουμε με ένα πιρούνι  2. Βάζουμε ένα κουταλάκι του γλυκού άοσμο λάδι καρύδας να κάψει σε ένα τηγάνι, εγώ χρησιμοποίησα ομελετιέρα 26 εκατοστών και απλώνουμε το μισό από το μείγμα μας. Χαμηλώνουμε λίγο τη φωτιά και μετά από 5-6 λεπτά και

TGIF!!! On the Docket for tomorrow is an 18 mile trail run!!! It's always good to have a plan when it comes to food and activity.  What you put in, is what you will get out!  So, I put lots of simple, healthy yums in my belly today.  Protein, some carbs, healthy fats and plenty of water to stay hydrated. Here's what's in my bowl⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇⬇ 6 oz. of protein diced (💫Use your favorite: Tofu, Tempeh, or Chicken) 6 oz.  Rice (steamed) 3 oz. tomatoes 3 oz. green peas (steamed) 1/2.  Small Avocado 1 Tbsp. Red onions 1 Tbsp. Chipotle Pesto #conciousdips 1 Tbsp. Cilantro Pesto #conciousdips 1 Radish  So, what are your plans for the weekend?

Emma and I stepped out today to run some errands and the weather is finally feeling like spring. It is absolutely a beautiful day and it has me looking forward to summer beach days. We are a big beach bum family and spend a lot of time there during the summer. Actually, my husband and I like to say that’s how we fell in love. During summer days at the beach ! ❤️❤️ . . So yes the beach is a very special place for us as a couple but it also brings special memories of me as a child. Memories and traditions that I have carried with me as an adult. One of these traditions is stopping by a local fish market right at my favorite beach and picking up some fresh seafood. I live in Rhode Island so I’m lucky enough to have access to very fresh fish and shellfish. . . I’m so looking forward to this summer and heading to the beach and getting some seafood on our way out. My favorite dish to make with seafood has to be paella! I make a version where I substitute rice for quinoa to give it some added nutrition. Stir fry the vegetales y carne molida! 🍃Preparo la carne molida por a parte con cebollita y tomate. En un wok mezclo todas las verduras con especias y condimentos al gusto - le puse brocoli, pimentón, zuquini, champiñones portobello y orellanas de @productosbague. Una vez ablanden las verduritas le mezclo la carne molida! Por encima le puse tahini que me fascina! ••• Vegetable and ground beef stirfry! 🍃 I cook the ground beef a part with some onion and tomato. In a separate wok I saute all the veggies with different spices and condiments - I added broccoli, red bell pepper, carrots, zucchini, portobello mushrooms and @productosbague oyster mushrooms. Once the veggies are done, I mix in the ground beef.
