Sunday mornings where never it like this, let me tell you. 😂 I was rarely making a veggie scramble for breakfast. I’d love to lounge in bed on a #sunday, and just enjoy the #stillness. I’d grab the latte Keith made me, and a breakfast bar or a quick bite of cereal as we were going out the door. I found that in this new way of cooking and eating, I’m enjoying the prospect of vegetables, lots of flavorful spices, and a chance to try new things. We are adventurous eaters around here, and I love flavor, but I just didn’t really think I was that great of a cook to attempt to much of anything. Keith was teasing me about starting things on fire yesterday, but what I didn’t tell you was that on Wednesday he told me that I’m turning into a pretty good cook. That’s kind of new for me, because typically I just haven’t cared to invest a lot of time in the kitchen. He just does it better, so I let him. A monkey did it better often, lol. 🐵 Today before I head to worship, I enjoy my favorite new breakfast, the veggie scramble. With broccoli of all things. Who would’ve thought? Reading through Matthew 27 in preparation for our pre-crucifixtion message this morning in church. Pastor always draws out amazing principles and ideas from this time of year. I love his teaching. There is always so much to learn so I’m grateful for some of the workshops that have been hosted in our area. Breakfast prep: breakfast sandwiches with veggie eggs, spinach, tomato, and pepperjack. They freeze well and are microwaveable in the parchment paper. The string was not for cuteness but rather because the masking tape wouldn’t stick. 😉 With the corners I made breakfast burritos with pepper jack, green chile, and roasted kabocha squash as potato substitute. 6 eggs = 5 sandwiches and 5 burritos. Yum!
