My custom #trailmix based on: . ✔️my #viome report @myviome ✔️my #sanesolution diet @jonathanbailor ✔️my #mycotoxin sensitivity . ☑️ #mulberries were in my top 5 superfoods on my viome report. Dried mulberries may not be perfectly SANE but I’m going to give them a try based on my viome. Any dried fruit is high risk for mycotoxins, but I am happy to say I purchased @terrasoul Superfoods white sun dried organic non-GMO mulberries from @amazon And had no mold reaction. . ☑️ #cashews were on my viome Enjoy list. Cashews are also a #wholefoodfat for my SANE eating plan. The caution is that cashews can be high mold toxin. I have great luck with @wholefoods @365bywholefoods brand unsalted cashews. They seem to be consistently low mold. . ☑️ #walnuts are on my Enjoy viome list. I also only purchase @365bywholefoods Brand unsalted walnuts and I have not had a mycotoxin reaction. Walnuts are another good #wholefoodfat to enjoy on the SANE plan. . ☑️ #coconutflakes . Any dried coconut is high risk for mold toxin. I only purchase Let’s Do Organic. Coconut oil was on my Enjoy viome list but #coconutoil is 99.9% high mold toxin and is not a whole food fat. For the SANE diet, probably fresh coconut meat is the better bet but I’m not trying to be hacking into fresh coconuts everyday so I’ll see how the flakes treat me. . ☑️ #seasalt is on my viome Enjoy list. I use @labaleineusa course grind sea salt exclusively. I’m not sure why but I’ve had an inflammatory reaction to at least a dozen brands of sea salt and pink Himalayan salt so I stick with this brand. . 🙌🏼Well, that’s my custom snack mix for the week. Happy #earthday, everyone! I challenge you to go #meatless today! Here is a #vegan #breakfast idea to get you started! Vanilla Whole Wheat Pancakes and Tofu Scramble with a Tangy Cashew Cream Cheese!  Whole wheat #pancakes: Combine 1 cup of #wholewheat flour 1 tbsp of baking powder 1/2 tsp sea salt 1 cup unsweetened vanilla #almondmilk 2 tbsp pure maple syrup 1/2 tsp cinnamon 1 tsp #vanilla extract Whisk and set aside for 10 mins to allow gluten to develop! This will give you fluffier pancakes. Heat skillet to medium heat, use a spoonful of vegan butter to coat pan, and pour in your batter! Flip after 2 mins. Drizzle with crunchy #almondbutter! I'm not into maple syrup, but feel free!  Cashew cream for tofu scramble below: (you can use this as a pasta sauce or dipping sauce for crackers too!) 1 cup of raw #cashews soaked overnight Juice of 1 lemon 1 tsp Apple cider vinegar 1 tsp onion powder 1 tsp garlic powder 1/2 cup of #nutritionalyeast (go crazy, you can add more!) 1/2 cup - 1 cup of vegetable stock, depending on how thick or runny you like it and how powerful your blender is! If you like a thinner sauce and your blender isn't high powered you may need to add more liquid. But if you're like me and you like a thick sauce and have a high speed blender, less liquid will do! Optional: handful of chives  Tofu Scramble: Heat skillet to medium heat, add 1 tbsp of extra virgin olive oil and half a can of fire roasted #tomatoes. Cook for 2 mins. Add 1 brick of firm #tofu (16 oz). Make sure you drain it and squeeze out the excess water. Add 1 tsp #onion powder 1 tsp #garlic powder 1/2 tsp #cumin 1/2 tsp #turmeric 1/2 tsp #salt 1/2 tsp of #pepper Cook for two mins.  Chop a vegan #sausage (I used Tofurkey kielbasa) into small pieces and add to skillet. Add 1/4 cup of cashew cream. Stir in and cook for another minute. Add a couple of handfuls of chopped #kale and cook until wilted. DONE! Keep some cashew cream sauce on the side when serving in case you're a #glutton
