👨🍳Batch Prep time with these BERRY COMPOTE PANCAKES👨🍳 - 🥞Get a couple of pans on the go and you’ve got a few days’ worth of pancakes that you can throw in the fridge or freezer. - ⏰If you have the time in the morning, then yeh I would make them fresh, but, if you are perhaps giving pancake’s a miss because of time, then don’t worry, batch prep away. - ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️ - Difficulty: Easy - Cook time: 10 mins - Calories: 500 in total (all pancakes and compote) - Makes: 4 – 8 depending on size you prefer - 280g flour 60g caster sugar 4 tsp baking powder Pinch of salt 480ml almond milk 2tsp Vanilla essence 40ml rapeseed oil 240g frozen berries 40g chia seeds - To make the pancake batter in bowl combine the flour, sugar, baking powder, salt, soy milk and vanilla. Whisk together until a nice smooth mixture is created. This can also be done in a blender. Transfer the mixture into a measuring jug to make it easy to pour into the pan. - Heat a non-stick pan to a medium heat and add the rapeseed oil. Pour in puddles of the pancake batter, watch for bubbles to appear on the surface then flip over and cook for a further seconds. - Meanwhile in a separate pan heat your frozen berries with a splash of water and your chia seeds to make a lovely chia seed jam. - Load up a plate with your pancakes and top with the chia jam, I have added some dried fruit sprinkles with puffed chia seeds so feel free to sprinkle on top something special. - ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️ - ☀️Have a great Saturday everyone and I hope you enjoy these.☀️ -
