Rosio’s mole with dried scallops and grilled hoja santa - Previous noma Chef Rosio returned to the team for this Mexico pop-up. And she contributed her own recipe of the Mexican mole sauce. It was made from around 35 ingredients including raisin, sesame, cinnamon, banana, chocolate, peanut, almond and different kinds of herbs, peppers cooked with pig oil. Hoja Santa and some epazote leaves were grilled with smoked butter and topped with dried scallops fudge. - The sauce was full of flavors and worked so well with the dried scallop fudge. Cerdo Pelonand fresh milled corn from Yaxunah - Basically, this was the Mexican suckling pig taco. The piglet was first bathed in coconut water, then slow cooked over char for six to seven hours with coconut oil. The outcome was an amazing juicy piglet. - The sides for tacos were lime, cilantro, caramelized banana slices with avodo chili sauce, and a thick piece of jicama with parsley sauce and seaweed salt. Tostada with Escamdes - Escamdes, the ants’ eggs, are considered as “insect caviar” by some people. The beans around the tostada edge were Ibes /espolon beans, a kind of local green and white bean in Mexico. The plating was simple and elegant. Whole grilled pumpkin - Tulum local pumpkin was used mainly as the container while the one from Oaxaca was sliced and rolled with paste made of avocado, seaweed, Habanero pepper and tamarillo. Melon Clam from the Sea of Cortez - This was kind of ceviche which used all parts of the clam. Samphire brought another layer of umami.
